How to make gajjar Halwa

Gajery halwa or gajjar  ka halwa  is the most favourite  of  dessert  of the Punjabis.As winter  approaches  people  look for the lovely  fresh  red carrots  for the special  dish. This dessert  is a favourite    in weddings menus.
Here is the recipe to make the desert  gajery  halwa

Ingredients

Carrots large -10
Milk full cream 1 litre
Sugar - 300 grams
Ghee - 2 tablespoons
Almonds  - 8 to 10( soaked )
Khoya  - 100  grams
Cardamon  powder

Method

Wash and grate the carrots.Boil the milk in a pan and add the grated carrots .Boil till the milk  is reduced and gets well blended  with  carrots.This can be done on  a slow fire. This process  will take about 45 minutes. Keep stirring  constantly.once the milk is reduced  sugar  can be added.
Add the ghee and the almonds to the carrot halwa.Turn off the gas .Add the khoya  and
Cardamon  powder. It can be  served  hot or cold.
