Pomegranate and flax upma
Upma is a very simple breakfast, mainly had in the southern states of India. Today I have made a healthier and wholesome version of it.
The main things required are -
Semolina or sooji - 250 gram
Flax seeds - 2 to 3Tsp
Mustard seeds - 1/2 tsp
Onions finely chopped _ 1
Curry leaves - few
Ginger 1 small piece finely chopped
Green chilly - 1 chopped
Almonds 3-4 chopped
Green peas - a handful
Pomegranate seeds to garnish
Oil - 2 tsp
Salt to taste
Flax seeds - 2 to 3Tsp
Mustard seeds - 1/2 tsp

Oil - 2 tsp

METHOD
In a pan dry roast the semolina for five minutes on a low flame. Do not over roast it. keep it aside
Now in a panheat the oil and let in the mustard to crackle. Add the flax seeds, peas, onions and ginger and saute them for few minutes, or till the peas and onions get soft.
Add the green chillies,almonds and saute for a minute. Add the semolina and mix well with all other ingredients.
Take about 1/2 litres of boiled water and pour to the Semolina mix. keep stirring until all the water has been absorbed. Garnish with pomegranate seeds.
Serve hot with any chutney or sauce.
*peanuts and carrots can be substituted .
* Cashew nuts too go well instead of walnuts. You can try out variations according to your taste.
