Kofta curry
You can make koftas out of different vegies available in the market. Today I have made these yummy koftas using lauki or bottle gourd . Using bottle gourd the dish becomes subtle. Not heavy and loaded with rich cream as you get in restaurants. So try it out.
Ingredients for koftas
Medium size bottle gourd or( lauki)
A corn flour - 2 tsp
Besan -2 tsp
Salt to taste
Red chilli powder- 1/2 tsp
Coriander powder -1 tsp
Amchur powder 1/2 tsp
Finely chopped green chillies
Finely chopped ginger 1/2 tsp
Oil for frying.
Method
Peel the bottle gourd and grate it in a grater. Since the bottle gourd will be juicy, we need to take the juice out of it. For that I l'll just press the grated bottle gourd in my hand and squeeze it , little by little. The juice can be added to the gravy for an extra nutrition value.
Now take a bowl and mix all the above ingredients to the grated gourd. Mix them well. Divide the mixture into small round balls . Remember the mixture does not turn watery, if so you can add a little more of besan and dust it with the corn flour.
In a wok, pour enough oil to fry the koftas. Fry till each is golden brown. Once the koftas are ready keep aside.
FOR THE GRAVY
For the gravy we will need
Onions - 2
Garlic ginger paste
Coconut milk - 1/2 cup
Tomato- 1
Salt to taste
Garam masala
Sugar - 1 tsp
Method
In a pan fry the onion with 2 Tsp of oil till light brown. Add the ginger garlic paste and saute for a minute.
Let cool. Now in a blender blend the fried onions and tomatoes to a smooth paste.
Put back in the pan and fry again for about five minutes. Add salt, red chillies and a little sugar to it and stir. Now add the coconut milk to the gravy and simmer for about 5 minutes. Add the left out water and simmer.
Now you can add the fried koftas to the gravy and cook for another five minutes. Garnish with chopped coriander . overlooking will break the koftas, so do not simmer for a long time.
The dish is ready to be served with rice or roti or even naan.
