HOW TO MAKE PERFECT PUNJABI KADHI

PUNJABI KADHI

Punjabi kadhi is  dish mainly  made up of curd and besan(gram flour).
It is usually had with rice.

INGREDIENTS

Curd (sour) - 2 cups
Besan           -1/2 (for cup for mixing in curd)
Besan           - 1 cup for making( pakodas)
Onion           - 1 large
Garlic            -5 cloves
Ginger.           - 1 grated
Cumin seeds.   1/2 tsp
Funegreek seeds 1/2 tsp
Asafoetida - a pinch
Salt to taste
Turmeric
Red chillies
Green chillies - 2
Curry leaves - 6-8
Corainder leaves
Garam masala
Oil

Method


First we will
Make the pakodas
Mix the besan and beat well.
Add some garlic,salt and chopped onions
To fry the pakodas.

In a deep kadai or pan fry the pakodas till brown.keep aside.

For the Kadhi


In another pan heat oil and add fungreek seeds,curry leaves,cumin seeds and hing.saute for a minute.Now add the chopped onions ,garlic,ginger and  saute.once the onions are brown add salt,and other masala(turmeric,chilli,coriander powder)
Mix well.

Beaten curd and besan

Now beat the curd well and the gram flour and add water to it .pour the mixture into the pan and stir well.It needs to boil,after the first boil add the pakodas and again boil for 20 - 25 minutes on a  slow  flame.A nice semi thick consistency is obtained.Garnish with fresh, green coriander.serve hot with rice.
