PINEAPPLE HALWA
Pineapple halwa is very popular in south India. I t is also called Kesari because of the beautiful saffron colour it gets.
This pineapple halwa needs very few ingredients which are easily available at home.
Ingredients
Semolina or sooji - 2 cup
Ghee - 1 cup
Sugar - 1cup
Pineapple. - 1 cup (chopped)
Saffron - 2-3 strands(soaked) in
milk
Raisins for topping

Method
In a pan heat the ghee and roast the sooji on a low flame until light golden. Add the cut pineapples and stir for about two minutes. Turn off the flames.
In another pan take four cups of water, stir in the sugar and boil. Once again turn on the flames of the roasted Sooji ,Slowly add the sugar water to the mixture of pineapple and Sooji and keep stirring till all the water has been absorbed .Add the saffron and stir well. Turn off the flame.Top it with some raisins.
The pineapple halwa is ready. It can be served hot. The flavour of the pineapple and the saffron give a rich taste to the dish and has a very unique and rich and shiny colour.
I didn't know that semolina goes very well with sweet pineapples ,until I tried out this dessert.
