Vegetable Idli






World Idli day is celebrated on 30th March. This day a Idli caterer made more 1300 varieties of idlis.It  is a steamed dish,popular not only in south India ,but also many parts of the world.I t is gaining great  popularity because it is a healthy steamed food,usually accompanied with sambhar and chutney.

It's subtle taste and soft texture is awesome.Nowdays there are many variants to this dish.They are quite easy to make,but for the first timers ,be a little patient,as it involves soaking and grinding to make a nice batter for the idlis.
All you need is some rice and lentils .They should be in a correct  propationate to get a good  soft idlis.

Method for the batter

Idli rice  - 2 cups
normal rice - 1 cup
Whole urad dal - 1 cup
Funegreek  seeds - 1/2 tsp
Wash  the rice,dal and funegreek seeds throughly,and separately for  at least seven hours.(cover with sufficient water)

Now grind  each in a mixer or grinder adding little  water until the rice is soft and smooth.The Dal should be ground until fluffy. Add the funegreek seed paste and mix all in a vessel and let ferment for 6 hours.

Once the batter is ready you can pour a ladle full of  batter to the Idli mould and steam for 10 minutes.let cool and the idlis will come out white,buttery and  soft.
Serve  with hot sambhar and chutney.

Special vegetable Idli


We can make a variation to the dish,by adding some vegies.For this  take some steamed idlis and   cut them in fours.In a pan,add oil and saute onions,capsicum,carrots till soft,sprinkle salt and red chillies.Add soya sauce and chilly sauce and stir fry.Add the idlis and serve hot.
