Dum aloo |
Dum Aloo is a very simple north Indian dish, made out of whole baby potatoes .
Ingredients
Baby potatoes - 8
Onions -2 finely chopped
Garlic - 1 tsp paste
Ginger - 1 tsp paste
Tomato - puree 1/2 cup
Salt To taste
Turmeric. - 1 tsp
Red chilli powder - 1 tsp
Garam masala - 1 tsp
Curd - 1/4 cup
Oil
Method
Wash and peel the baby potatoes and lightly shallow fry and keep aside.
Heat a pan with some oil and fry the onion and garlic paste till brown Blend in a mixer and again put the mixture in the pan.
Now add the ginger and curd and tomato puree and saute till all the ingredients are infused well. Add salt, turmeric ,chilly powder and stir well. Add the fried potatoes and cook on low heat for few minutes. Add water to get a nice curry and cover and cook till potatoes are soft and we'll cooked.
Garnish with garam masala and corainder leaves. Best to have with puri or Partha.
