Chicken  Biriyani

Chicken Biriyani is a complete meal,consisting of three main ingredients  chicken, rice and spices. It needs to be cooked with great care and patience as it involves   time to time  monetering.

Ingredients 

Basmati  rice - 500 grams
Chicken legs  - 1 kg
Onions   - 4  large ( sliced )
Tomatoes - 2 ( chopped) 
Tomato  puree 2 tsp
Green chillies -  4 slit 
Cumin seeds 1 tsp
Ginger paste - 1 tsp
Garlic paste  - 1tsp
Cloves - 4-5
Green cardamon - 4
  Bay leaves - 2
Pepper  whole  few ( optional) 
Oil to cook
Turmeric  
Yogurt  1 cup
Milk  -  1/2 cup
Salt to taste 
Red chilli  - 2 tsp

Method 

Wash the rice, boil it,( it needs to be  cooked  again, so rice should be only half cooked. )
Meanwhile  marinate the chicken  with turmeric, salt, yogurt and chilli powder. Marinate  for an hour. 

Soak saffron  for half an hour

Heat a deep bottomed  heavy  vessel, add oil ,add the cumin seeds, bay leaves, peppercorns, for a minute. Now add the long sliced onions till they are deep brown, few   fried onions can be kept  to garnish. 
Add the ginger and garlic paste  and  fry for some time, add tomatoes  and fry again, add the pureed and the green chillies. Now add  a little salt and coriander powder and garam masala  add the marinated  chicken and let it simmer for sometime adding  littlewater, and turning it so that it's doesnt 
burn. 
Once  it's done and is aromatic add half the rice, sprinkle the saffron and milk  and and the fried onions   and now add the remaining  rice and seal the vessel tightly and cook over medium  heat  again for about ten minutes. Turn off flames , do not open the lid immediately. Let the masalas infuse into rice. 
Garnish with fried onions  and green chillies. Serve  hot with chutney  or curd  raita.
