Pindi chole or chanas go very well with baturas .Here is a quick and easy recipe of pindi Chana
Ingredients -
Kabali Chana (white) - 250 grams
Onion - 3
Garlic - 6 to 7 cloves
Ginger - 1 inch
Bay leaves -1
Clove - 2
Coriander - 1tsp
Chana masala - 1tsp
Green chillies -2
Red chilli powder - 1 tsp
Black pepper 1tsp
Tamarind pulp - 2tsp
Coriander leaves to garnish
Oil
Salt
In a pressure cooker boil the chanas along with finely chopped onions and garlic. Cook for at least 15 minutes.
Take a pan, heat some oil, add the bay leaves and cloves. Add salt, Chana masala,pepper,chilli powder, garam masala ,grated ginger and saute till the masalas blend together well.saute till you get a dark brownish colour. Add the tamarind to the mixture Now we can add the the boiled chanas to this masala and cook again adding a little water.cook till the chole masala is well absorbed in the Chana.
Garnish with slit green chillies and green coriander leaves.
Perfect with Puris, baturas and rice.
